Chop chili, tomato, shallots, lemongrass, galangal, kaffir lime leaves, coriander roots and mushrooms into small pieces
Place water, garlic, lemongrass, shallot, galangal, kaffir lime leaves, chili and coriander roots in a pot and bring to boil
Once boiling add remaining ingredients and cook until you can taste a good balance of flavors
If you would like to make your Tom Yum creamy add in the coconut or condensed milk.
Garnish with freshly chopped spring onion and coriander leaves.
