Directions
STEP #1
Chop garlic, chili, tomato, kaffir lime leaves and mushrooms
STEP #2
Place water, coconut milk, galangal and onion in a pot and bring to boil
STEP #3
Once boiling, add kaffir lime leaves and cook for 2 minutes
STEP #4
Next add lemongrass and garlic and cook for a further 2 minutes
STEP #5
Add mushrooms, chili, tamarind juice, coconut syrup, salt, soy sauce, lime juice and cook for a further 2 minutes
STEP #6
Lastly add tomatoes and cook for a final 2 minutes before serving
STEP #7
Garnish with freshly chopped spring onion and basil
